Seasonality isn’t a trend for us. It’s a guiding principle. We follow the rhythm of the Hudson Valley, working micro-seasonally and making deliberate choices about what belongs on the plate right now, while remaining responsive to the preferences and traditions of our clients. That discipline keeps our food vibrant, relevant, and deeply connected to the moment.
In our kitchens, intuition is supported by structure. Every menu is carefully composed, from portioning and dietary balance to pacing and presentation, so food performs just as well for twenty guests as it does for two thousand.

Our North Star: The Farm
We are one of the few caterers in the country to own and operate an organic farm. Katchkie Farm, our 60-acre property in the Hudson Valley, is not a symbol — it’s a working part of how we cook.
From May through October, up to 30% of the produce used in our kitchens comes directly from our own soil, grounding our food in the rhythm of the growing season.
